Cafe Colomba is a farm that has been in the same family since the 1890's. As far back as anyone can remember, it has been mostly planted in coffee. Covering close to 274 hectares, this farm sets at an elevation of 1,200 to 1,300 MASL and enjoys the shade of many trees, including oak and a variety of eucalyptus, and is home to Pacamara, San Pacho, Yellow Caturra, Portillo, Castillo, Geisha, Pink Bourbon, Catimor varietals. - Anthem Coffee Imports

The pacamara was basically the result of a real-life version of Weird Science: a bunch of Salvadoran researchers picked their favorite coffee varietal attributes, hooked electrodes up to coffee trees, hacked a government computer, and then Kelly LeBrock came out of a closet carrying some pacamara.  Cafe Colomba delivers perfectly on the promise of this 30-year science experiment, giving us an uncommonly large bean accompanied by an uncommonly complex and unexpected flavor profile.  There is quite a bit going on in the cup, but if you ask Savannah, she will tell you this coffee reminds her of orange-raspberry cheesecake, dusted with baking spices. - Andrew
